Vinification:
traditional on skins, once grapes reach the cellar stripping
takes place and the liquid, together with the skins, is
left in stainless steel vats for 36/48 hours at 2 °C.
Within 24 hours the skins usually gather on the surface
forming the so-called “cap”. After inoculation
with selected yeasts, fermentation starts. Skin maceration
on the must lasts, depending on the year’s harvest,
a period going from 12 to 15 days maximum. It gives colour
and releases in the must the tannins present on the skins.
Maceration takes place at the same time as fermentation.
Once maceration ends, skins are taken off and, if fermentation
hasn’t ended yet, it goes on, always paying attention
that the temperature doesn’t exceed 31 °C. Once
fermentation ends, one racking is carried out and then
the wine matures in vats at controlled temperature.

TASTING
Visual examination:
clear, intense ruby-red colour
Olfactory examination:
Intense and fairly complex. Fruity and slightly floral
on the nose, this wine is characterized by mature red
fruits; touches of blackberry, currant fruit and plum
jam are in fact clearly detectable
Gustatory examination:
slightly lively, warm and soft. Freisa tannin good length
and pleasantness are properly completed by fine freshness.
It is no doubt a full bodied wine.
Gastronomic matches:
table wine, being slightly lively it is a good match
for many dishes. It is indicated for fat dishes because
it balances tactile sensations on the palate. It is
excellent with processed pork meats, both slightly and
half-seasoned cheeses, first dishes with meat sauces.
We suggest trying it also with elaborated fat main dishes
WINE FEATURES:
in past times, freisa grape variety was rather widespread
in Piedmont, nowadays only a few wine producers have
maintained this tradition. The tannin is no doubt hardly
manageable, but thanks to proper soils and time freisa
leaves a distinct pleasant memory

it shows an interesting bottle evolution during the
three years following vintage date
